After Holiday Healthy Meal Options

Hummus
1 c garbanzo beans, cooked and chilled
1 T tahini
1 clove garlic
½ t cumin
1 T lemon or lime juice
1 T olive oil
salt and pepper to taste
Vegi-feta Sandwich
Pocket Pita
Shredded lettuce
Red onion, thinly sliced
Cucumber, sliced
Tomato, chopped
Fresh herbs, chopped
Feta cheese, crumbled
Kalamata olives, chopped
Balsamic vinegar
Olive oil
Lamb and Chicken Skewers
1 lb chicken breast
1 lb leg of lamb
Couscous Salad
In 4 cups of water or stock, boil 2 cups of couscous. Test to be sure granules are not are not hard in the middle. Drain well and chill.
Add the following ingredients:
¼ c chopped parsley
¼ c chopped cilantro
¼ c chopped mint
¼ c scallions
1 c diced mixed bell peppers
1 T cumin
½ T coriander
½ T paprika
Fruited Yogurt Dessert
Honey
Toasted nuts
Berries and bananas, sliced
