Tasty Tuesday: Bridge Bar and Grill

EUGENE, Ore. - The Bridge Bar and Grill used to be located in the building that Rye now calls home.  Now you'll find it right across the street from Matthew Knight Arena.

While it may appear to be just another bar and grill on the surface, Chef Richard Balajadia is constantly coming up with new creations.  Changing his menu with the seasons to keeping things fresh and always ready to jot down ideas for new ways to wow the customer.

His latest creation takes a simple scallop dish and takes it a step further.  After preparing and presenting the popular seafood he is giving them a pop of pork.  Instead of throwing out the drippings rendered from bacon used in other dishes, he collects the flavorful fat.  With the assistance of a food safe wick, he is creating candles that will give diners the chance to not only enjoy a little ambiance, but also have a little fun with their food.

In the video below Chef Balajadia talks more about how he came up with the idea for his scallop dish.  You can also learn more about The Bridge Bar and Grill by checking out the last visit we made.
